Ingredients

  • ¼ cup extra virgin olive oil
  • 1 Tbsp. butter, melted
  • 1 Tbsp. honey
  • 1 Tbsp. brown sugar
  • 3 cloves garlic, minced
  • ½ tsp. dried oregano
  • ½ tsp. dried basil
  • 1 tsp. parsley
  • Salt and ground black pepper, to taste
  • 16 oz. boneless, skinless chicken breasts
  • 4 medium red potatoes, cut into quarters
  • 2 cups broccoli florets

Preparation

Preheat oven to 400° F. Lightly oil a baking sheet.

In a small bowl, whisk together olive oil, melted butter, honey, brown sugar, garlic, oregano, basil, and parsley. Season with salt and pepper, to taste. Set aside.

Place thawed chicken breasts, chopped potatoes, and broccoli florets into a single layer on prepared baking sheet. Spread chicken breasts with marinade and drizzle over potatoes and broccoli.

Bake for 20-30 minutes, or until internal temperature of chicken reaches 165° F. Serve immediately.
