Decadent chocolate peanut butter muffin recipe

Makes 12 servings

Ingredients

  • 3 large ripe bananas
  • ½ cup granulated sugar
  • 1 large egg
  • ⅓ cup unsweetened applesauce
  • ½ cup peanut butter
  • ½ cup whole wheat flour
  • ½ cup all-purpose flour
  • ½ cup unsweetened cocoa powder
  • ½ tsp. salt
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1 cup semi-sweet chocolate chips

Preparation

Preheat oven to 375 degrees F. Line a muffin tin with baking cups or spray with non-stick cooking spray.In a large bowl, mash the bananas with a fork. Mix in the sugar, egg, applesauce, and peanut butter until well combined. Stir in the flours, cocoa powder, salt, baking soda, and baking powder and mix lightly until just moistened. Fold in chocolate chips.

Divide the batter between the muffins cups and bake for 20 minutes or until a toothpick inserted in the middle comes out clean. Cool and enjoy!
