
Black bean jalapeno tostadas recipe
Makes 2 servings
Ingredients
- 4 (6 in.) flour or corn tortillas
- 1 (15 oz.) can black beans, drained and rinsed
- ¼ cup chopped onion
- ½ cup frozen corn, thawed
- 1 small tomato, chopped
- ½ cup shredded cheese
- ½ cup jalapeno slices
Preparation
Preheat oven to 400 degrees Fahrenheit. Line baking pan with parchment paper. Place four tortillas on pan. Set aside. In small bowl, mash beans with fork until pasty. Divide evenly among the four tortillas. Top with onion, corn, tomato and cheese. Bake for 10-15 minutes or until cheese is bubbling and turning brown. Remove from oven and top with Jalapenos. Serve immediately.
